CHOCOLATE
FAQs

  • What Is Single Source / Single Origin Chocolate?
Single Source chocolate means that all of the beans come from a single estate or cooperative. By enjoying single-source chocolates you are able to detect the unique aromas and tasting notes that are endemic to that region. Much like wine and coffee, the flavors of chocolate can vary wildly based on the soil and environment.
  • Is Single Source Chocolate Better Than Blended Cocoa Beans?
'Better' is a subjective term. It allows for a unique flavor to shine through that you won't find in high-output chocolate brands (even luxury brands). For them, beans are generally blended to provide a consistent flavor from batch to batch and allow them to produce on the scale that they need to. A quality blender can still create something with an amazing flavor profile - but the localized nuance is lost.
  • What Is The Best Way To Store Chocolate?
To improve chocolate's shelf-life, store in a cool, dark place. Refrigeration is okay, but allow chocolate to come back to room temperature prior to enjoying. Extended periods of refrigeration may change the chocolate’s texture. Our Origin dark chocolate can keep 6-8 months. Our Destination chocolates (because of the addition of fruits and nuts) are best enjoyed within 2-4 months. But we hope you won’t wait that long!
  • Is Dark Chocolate Dairy Free?
In most cases, yes. Our dark chocolate certainly is - it only contains refined cocoa beans (aka cocoa mass) and cane sugar. All of our Origin Collection bars are solid dark chocolate. However, some of our Destination Collection chcolates do contain milk products - so read the ingredients carefully.
  • Is Dark Chocolate Vegan Friendly?
Our origin collection bars only contain refined cocoa beans (aka cocoa mass) and cane sugar. However, our cane sugar is not certified vegan. Sometimes animal bone char is used to refine cane sugar. Depending on how strictly vegan you are, this may or may not be an issue for you. We are exploring new options for sugars so that the chocolate can be considered vegan.
  • What Is The Difference Between The Origin & Destination Collections?
The Origin Collection is chocolate in its purest form. We start with single-source beans, roast, crack, winnow and mill them to a smooth and creamy texture. Only sugar is added. These 2-ingredient bars have a 70% cocoa content. The Destination Collection takes chocolate from the Origin Collection a step further. Inspired by childhood favorites and world travel, spices, fruits, nuts and milk fats are added to create memorable flavor profiles. Our bars still remain over 50% cocoa content (typical Milk Chocolate can be as low as 35%), so our goal is to still let the chocolate shine through.
  • What Are Your Shipping Options?
We are a Dallas, Texas based chocolate workshop and offer free hand-delivery on all orders over $20 within the Dallas area. Outside of that area we ship via USPS. Shipping rates do apply and it varies by order size. We include insulated boxes and cold gel-packets for free when warm weather requires it. When the weather gets too hot to ship, we will notify the customer and offer to cancel the order. We want you to be happy with the product you receive and would rather lose a sale then send you a melted chocolate bar!
  • What Is Cocoa Mass?
Cocoa Mass is simply a shorthand terms for processed cocoa beans. We roast, winnow, crack and then refine our beans when they then go into the melanger and sugar (and other flavorings are added if we are making a Destination Collection bar). When cocoa beans are refined the cocoa butter content inside the bean becomes heated and starts to liquify. The term 'cocoa mass' is synonomous with 'cocoa liqour' - which has nothing to do with alcohol - but we aren't using that term to avoid confusion for people not as familiar with all of this technical jargon.
