New Flavor: Chiapas Chocolate

When we started Expedition Chocolate, we always had it in mind to create a bar that was a riff on Mexican Hot Chocolate - sweet with a little bit of spice. When we tried these beans from Chiapas, Mexico, we knew we had the right base to create what is our favorite chocolate of the moment.

A Spice That Won't Have You Running For The Hills
The Chiapas beans a have well-balanced flavor profile with some notes of nuttiness (and a little berry) that are still detectable up front. The added Cinnamon is also something you pick up on immediately. As the chocolate flavor begins to dissipate, the spicy notes from the Cayenne start to kick in. It gives the tongue a tingle, but won't have you looking for a glass of water or milk to make the burn go away. It is a pleasant spice.
This is still a 70% dark chocolate bar - no milkfat was added. Finally, to give a little texture to the bar, we added toasted pepitas to the bar for a bit of crunch.
