We start with beans from southern Mexico's Chiapas region and then using the area as our flavor inspiration add to it both cinammon and cayenne pepper. Not so much to set your mouth aflame, though. The tasting starts off with bold chocolate notes and a touch of berry, then a few seconds in the gentle heat of the cayenne sets in. It leaves your tongue tingling, but not running for water.
To add some texture and crunch, toasted pepitas finish out the bar.
