As we sought to create a flavor that leaned into some of the warm spices of ginger and clove, our inspiration drew us to the multi-layered spices and milkiness of Chai. A great warming beverage for the winter time, this seemed liked a perfect flavor to introduce in the fall and avoid the whole 'pumpkin spice' band wagon.
Our version begins with a very light milk chocolate (only 30% cocoa solids). In this one, we wanted the chocolate flavor to compliment the spices - not the other way around. Spices include a pronounced note of ginger up front, followed by cardamom, clove, cinnamon, nutmeg, allspice and pepper.
Those who have not tried Chai may instead associate this with ginger bread. This isn't far off; the spice trade with the East brought many of these ingredients to Europe. Due to the high price tag for these spices they were reserved for special occassions, such as holiday treats.
